Ablo is a traditional food from Togo, an accompaniment to stews and meat dishes with a lot of similarities to fufu. This cornbread dish is served alongside freshly ground tomatoes, sliced onions, fried fish or chicken stew.
To prepare ablo you need to use fermented corn flour. Use steam to cook it and make little pancakes from it. As with kom and other Togolose dishes, for an inexperienced cook it’s not very easy to prepare.

Ablo
Servings 4 people
Ingredients
- 1 tbsp vegetable oil
- 3 cups white cornmeal
- ½ tsp salt
- lukewarm water
Instructions

In a large mixing bowl, combine the cornmeal, salt, and just enough warm water to make a firm dough.

Set in a warm area for two days to ferment. Place the dough into either fresh or dried corn husks coated inside with oil, ensuring that the husk curls around the dough.

Place a second husk over the first and knot the ends together with twine or fold the ends under. Cook the ablo in a food steamer for 20 minutes, securely covered, over rapidly boiling water.
