Chicken Scarpariello

The delicious chicken scarpariello recipe was provided by Chef Jaime Chabla, the Executive Chef at Il Monello, a classic Italian restaurant from New York.

Ingredients

  • 2 chicken breasts
  • 2 chicken thighs
  • 3 cloves garlic
  • 1 stem of rosemary
  • 5 oz white wine
  • 2 oz lemon juice
  • 2 oz butter
  • salt & pepper
  • 1 tbsp Italian parsley for garnish
  • ¼ cup chicken stock
  • cooking oil
  • 1/2 cup of flour

Instructions

  • Cut your pieces of chicken into bite-size pieces, making sure they are the same size to avoid undercooked/overcooked pieces.
  • Heat the pan with 4oz of oil.
  • Lightly toss to coat the chicken with the flour and place them on the heated pan making sure each side of the chicken is golden brown and crispy.
  • Once they are golden brown, drain the leftover oil from the pan and keep the chicken in the pan.
  • Next add the chopped cloves of garlic, and rosemary, as well as a pinch of salt & pepper. Sautée in the pan for an additional 2 minutes.
  • Next add the white wine, lemon juice, butter, and chicken stock to the pan.
  • Once the butter is melted place pan into the preheated oven at 350 degrees Fahrenheit (180 Celsius) for 4 minutes.
  • After the oven, place the pan back.
