Greek Watermelon Pie

Combining the natural sweetness of watermelon with a touch of Mediterranean flair, this pie is the perfect treat for warm weather and a wonderful way to enjoy the flavors of Greece.

This is a traditional watermelon pie recipe from the beautiful island of Milos, shared with Chef’s Pencil by Greek celebrity chef Giorgos Tsoulis.

Greek Watermelon Pie

A traditional watermelon pie recipe from the beautiful island of Milos in Greece.

Ingredients

  • 1 kg watermelon cleaned and pitted
  • 250 gr wheat flour sifted
  • 150 gr brown sugar
  • 80 gr walnuts chopped
  • 2 tbsp honey
  • 1 tbsp cinnamon
  • 100 ml olive oil
  • 150 gr sesame seeds

Instructions

  • Preheat the oven to 180° C/356° F with convection setting.
  • Place a colander over a bowl, add the watermelon, and, wearing disposable gloves, crush it with your hands to break it into pieces. Strain the liquid into another bowl.
  • Add the flour, sugar, walnuts, honey, and cinnamon. Mix with your hands until the dough is uniform.
  • Spray a 35×25 cm (~14×10-inch) rectangular baking dish with olive oil and evenly sprinkle half the sesame seeds on the bottom ensuring it is completely covered.
  • Spread the pie dough evenly over the entire surface of the dish, covering the sesame seeds. Press it with your hands, sprinkle with the remaining sesame seeds, and bake for 40-45 minutes.
  • Remove the watermelon pie from the oven, cut into pieces and serve.

Notes

Chef’s tip: Ensure the pie has a thickness of about 2 cm (3 quarter of an inch), creating a brittle-like appearance when sliced into pieces. Watermelon pie can be enjoyed either warm or cold.
