This white bean mash with salsa and fried tortillas is a flavorful and satisfying dish that combines the goodness of protein-rich white beans with the zesty flavors of salsa and crunchy fried tortillas.
It’s packed with proteins and vegan\vegetarian. This dish can work both as an appetizer and a main dish.
The dish is made with tender white beans cooked until soft and mixed with a tangy and spicy salsa with fresh ingredients such as celery, pepper, and lime. The salsa also features the unique flavors of parsley, coriander, and bay leaf, which add depth and complexity to the dish.
Fried tortillas are added to give the dish a crispy texture to carry the burst of flavor.

Instructions:
1. Soak the beans in water in the refrigerator for 12h. Rinse and boil in salted water adding a bay leaf. When the beans are fully cooked, take out the bay leaf and drain, saving the water.
You could also used canned white beans for a quick recipe.
2. Put the beans in a food processor and blend while gradually adding some of the cooking liquid until you achieve a smooth consistency.
3. Prepare you vegetables and clean them throroughly.
4. Finely chop the vegetables and herbs, season with salt and pepper, and mix in the lime juice and olive oil.
5. Cut the tortilla into triangles and drizzle with olive oil. Place the triangles into a pan and place in the oven at 180 °C (356 °F) for a few minutes. When they start to crisp up, remove from the oven and add the spice mixture.

Crunchy salsa:
- 1 chili pepper
- 50 g celery
- 1 small red onion
- 1 pepper
- 1/2 lime
- 1 bunch green parsley
- 1 bunch green coriander
- 1 tbsp olive oil
Fried tortilla:
- 2 tortillas
- 2 tsp cajun seasoning
- 1 tbsp olive oil
