Marinated Chicken Drumsticks with Honey, Garlic & Soy Sauce

This is a delicious and easy chicken drumsticks recipe that’s perfect for lunch or dinner. The chicken drumsticks are bathed in a garlic, chili and ginger marinade giving them a rich and spicy flavor. Serve with a side of rice and a sweet and spicy sauce.

Cooking steps

Marinade Preparation:

  1. Place all the ingredients into a blender and blend until you achieve a smooth and consistent liquid.
  2. In a bowl, generously coat the chicken drumsticks with the marinade. Cover the bowl with cling wrap and let it rest in the refrigerator for a minimum of 1 hour.

Sauce Preparation:

  1. Finely chop the chili pepper and green onion. Grate the garlic and ginger.
  2. Combine these ingredients with soy sauce, vinegar, lemon juice, and honey to create the sauce.

Cooking:

  1. Preheat your oven to 375°F (190°C).
  2. Once the chicken drumsticks have absorbed the flavors from the marinade, place them in the preheated oven.
  3. Bake for 50-60 minutes or until the drumsticks are cooked through and have a nice, appetizing color.

Rice Preparation:

  1. Rinse the rice thoroughly and cook it in salted water until it reaches your desired level of tenderness.

To Serve:

Serve the chicken drumsticks with a side of cooked rice and drizzle the sauce over the chicken or use it as a dipping sauce.

Note: this recipe works extremely well with chicken wings too.

Ingredients

  • 4 chicken drumsticks

Marinade

  • 1 garlic
  • 1 chili pepper
  • 1 cm ginger
  • 1 tbsp soy sauce
  • 1 tbsp neutral oil

Sauce

  • 1 tbsp soy sauce
  • 1 tsp vinegar
  • 1 tsp lemon juice
  • 1 tsp honey
  • 1/2 chili pepper
  • 0.5 cm ginger
  • 1/2 garlic
  • 1 green onion
  • 120 g rice

Instructions

For the marinade:

  • Put all of the ingredients into a blender and process until you have a homogeneous liquid.
  • Coat the chicken drumsticks with the marinade in a bowl and cover with cling wrap. Leave in the refrigerator for at least 1 hour.

Baked Chicken Drumsticks:

  • Preheat oven to 375°F (190 °C).
  • Once the chicken drumsticks have marinated, cook them in the oven for 50-60 minutes.

For the sauce & rice:

  • Finely chop the chili pepper and green onion, grate the garlic and ginger, then mix all of the ingredients with the soy sauce, vinegar, lemon juice, and honey.
  • Wash the rice and boil it in salted water.

To serve

  • Once the chicken is done, remove it from the oven.
  • Serve the chicken drumsticks with a side of cooked rice and drizzle the sauce over the chicken or use it as a dipping sauce.
  • Garnish with additional chopped green onions or chili pepper slices if desired.
